As a new mom, I now understand just how difficult balancing work, family, the house and still finding time to cook a healthy meal can be. So, I wanted to share one of my favorite easy and healthy meals that the whole family will enjoy.
Turkey Chili
(This turkey chili has even been approved by my father, 3 brothers and husband!)
Ingredients
Recipe Yield 7 servings
- 1 tablespoon canola oil
- 1/2 pound extra-lean ground turkey
- ½ pound lean turkey sausage (if you’re watching sodium, just use 1 pound lean ground turkey)
- 1 red or green bell pepper, chopped
- 2 (10.75 ounce) cans low sodium tomato sauce or crushed tomatoes
- 1 (15 ounce) cans kidney beans, drained
- 1 (15 ounce) can black beans, drained
- 1/2 medium onion, chopped
- 2 tablespoons chili powder*
- 1 teaspoon red pepper flakes*
- 1/2 tablespoon garlic powder*
- 1/2 tablespoon ground cumin*
- 1 pinch ground black pepper*
- 1 pinch ground allspice*
- salt to taste*
- to save even more time you can use a chili seasoning packet
Directions
- Add canola oil to skillet. Place ground turkey and turkey sausage in the skillet, and cook until evenly brown.
- Mix turkey, tomatoes, kidney beans, black beans, pepper and onion in a crockpot. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
- Cover, and cook 6-8 hours on low or 4 hours on high.
